I love to be technique centric with my hobbies - this book is a great reference, and really well illustrated. You can use it as a coffee table book too.

This is not a cookbook per se; rather an excellent technique of cooking book for meats, fish and vegetables. Great book for a new or experienced cook.

The best "basic techniques" book on cooking
The Essentials is the best book on basic techniques I've found in 20 year of cooking for friends and family. It's my go to gift for nieces/nephews graduating from college and anyone else who wants to learn more about some of the things they've had at our house.
After this, you don't need a lot of other cook books - you can make your own recipes based on the techniques.
